What Is The Suitable PH Range For Common Edible Fungi?

The pH value plays a crucial role in the growth of edible fungi, with each species having its own specific requirements. While the general pH range for most edible fungi falls between 3.0 and 8.0, each type has its ideal range. For example, Agaricus bisporus thrives best at a pH of 6.8 to 7.0, though it can tolerate a range from 5.5 to 8.5. Shiitake mushrooms, on the other hand, grow best at a pH between 4.5 and 6.0, within a broader range of 3.0 to 7.0. Black fungus prefers a pH of 5.5 to 6.5, though it can tolerate a range from 4.0 to 7.0. Oyster mushrooms typically grow well with a pH around 5.5, within a range of 3.0 to 7.2. Straw mushrooms, being more alkaline, are best suited to a pH of 6.8 to 7.2, though they can tolerate a broader range from 4.0 to 8.0.

During cultivation, edible fungi may produce acidic byproducts, such as acetic acid, citric acid, and oxalic acid, which can lower the pH of the growth medium. To counteract this, pH buffering agents like potassium dihydrogen phosphate, dipotassium hydrogen phosphate, and calcium carbonate are often added to stabilize the pH and ensure a balanced environment that supports the healthy growth of the fungi. These buffers help maintain the proper pH range for optimal development and yield.
